In 2022, exciting news broke of Norfolk Plant Sciences’ purple tomato and its USDA approval. Beyond citing the tomatoes’ high antioxidant levels, how can plant biologists best explain how this superfood was made and how it works? ASPB Plantae Fellow Yen Peng Apple Chew prepared infographics to help both scientific and non-scientific audiences understand the modifications that occurred to bring us the purple tomato and how the health benefits work.
